DeathbedFood Cooks Barefoot | Mushroom Risotto
For my latest “DeathbedFood Cooks Barefoot” post, I decided to make Ina’s Wild Mushroom Risotto from her Back to Basics cookbook. I had asked my Twitter followers what to make and risotto won.
I’d only made a risotto once before and that was 30 years ago. But emboldened by my new mission to cook barefoot I went ahead. It would’ve helped if I had watched her video on FoodNetwork.com but hindsight …
It was worth making it just to see the mushrooms prior to adding the rice. With shallots, that alone is DeathbedFood and would make a gorgeous side dish.
It took me 2 hours to make. I’m sure if you’re a better cook than me (which is pretty much anybody), it will take you much less time. I say “Try it, you’ll like (love) it!”
