Help! Barefoot’s Filet of Beef or Boeuf Bourguignon.
In going through my Barefoot Contessa cookbook collection I noticed that she has two beef Bourguignon recipes. I love beef Bourguignon which is DeathbedFood when done well. I’m in a quandary – which to make? Tweet me @DeathbedFood and tell me which you’d make and why.
Filet of Beef Bourguignon
This recipe comes from The Barefoot Contessa Cookbook. Ina tells the story:
Twenty years ago, I used to follow Julia Child’s wonderful beef Bourguignon recipe, but stewing beef can take a very long time, so I decided to make a version based on quickly sautéed filets of beef. It cooks in a quarter of the time and I think it is fresher than the original.
This recipe comes Ina’s Barefoot in Paris cookbook. Because of that, I think this is more true to its Parisian roots. Though it may take longer to make it may be worth it?
