~ Barefoot Contessa’s Penna Alla Vecchia Bettola ~
Because of my obsession with the Hamptons, I decided to make Barefoot Contessa’s Penna Alla Vecchia Bettola from her FOOLPROOF cookbook because it’s one of the iconic dishes made at Nick & Toni’s, one of the iconic restaurants in East Hampton. So it was a safe bet that it would be DeathbedFood.
Ina says this is like the ubiquitous Penne Alla Vodka but with more flavor. The chef at Nick & Toni’s told her the recipe originated from a restaurant in Florence. It took me 3 hours to make and was worth every ounce of effort. DeathbedFood! I can see why Nick & Toni’s has been serving it for decades.
